You pour water into the kettle, turn on the gas or the button on the electric kettle and wait for it to boil. Then just pour over the tea bag and it's ready. You don't even realize how many mistakes you made while making yourself a regular tea! It turns out that this - it might seem - banal and quick process is not, according to tradition. Depending on the type, the temperature and time of brewing tea leaves change. It is worth preparing tea at least once according to traditional methods to feel the difference "on your own skin".

From the Chinese emperor to all houses

According to legends, already in the XXVIII century BCE the Chinese Emperor Shennong enjoyed an infusion of steamed tea leaves. Only around 800 CE tea was brought to Japan, where it was cultivated on a large scale. With time, this drink was loved by all countries of the world, and Poles tried it for the first time in the 17th century! Due to the high price, tea was drunk only by wealthy people - it was available at the royal court and in the houses of the nobility.

Of course, we are talking about real, dried tea leaves. Currently, you can also get them, but they are more expensive than the instant ones or in bags. Most consumers choose teabags because they can be brewed in less than a minute and don't leave a cup of coffee grounds at the bottom. But tea gourmets point out that there is a real gap between the taste of real leaves and those ground in tea bags.

It is worth taking a closer look at the difference between these teas. Leafy, is nothing more than real tea leaves, dried in the sun. Tea in bags is usually tea dust, it is difficult to find even fragments of leaves there.

Each color needs a different temperature

Each leaf has a specific temperature and length of brewing. Tea will give back everything that is in it if it gets everything it needs - says an old Chinese proverb. Following this thought, let's get acquainted with the needs of individual teas:

Black tea

In the case of brewing this classic tea, we need boiling water - pour it with water at a temperature of 100oC. The most common mistake is to pour water at a lower temperature into it. The brewing process should take 3 to 5 minutes at most. After this time, tannins are released from the leaves, which neutralize the effects of theophylline and caffeine. Additionally, the tea turns bitter.

green tea

These leaves are very sensitive to the temperature at which they are scalded. It should be between 60 and 80oC. If our kettle does not have an option to show the water temperature, you should wait about 10 minutes after boiling before pouring the leaves into the water. Brewing should not exceed 3 minutes, as green tea becomes bitter after this time. The same leaves can be brewed even several times. The second brew is said to be the most valuable one.

White tea

Not only does it have an amazing taste, but the infusion itself acquires a beautiful silver-white color when brewed. As in the case of green, it can be brewed up to three times. The ideal water temperature for this process should be exactly 85oC. We brew it for 5 to 7 minutes to keep its flavor.

Yellow tea

It is called imperial tea, it is not very popular in Poland. However, experts praise its truly emperor's taste. If it happens to be in our kitchen, it's good to know that it can also be brewed many times - it all depends on your preferences. Each subsequent brewing of yellow tea must last longer than the previous ones, while the first one should last no more than 3 minutes at a temperature of 80oC.

The benefits of drinking tea

Tea leaves contain large amounts of antioxidants. They also contain tannins, theanine, fluoride ions and purine alkaloids, such as caffeine, theobromine and theophylline. Tea is rich in vitamins A, B1, B2, C, E and K. In addition, green tea contains the non-protein amino acid L-theanine, which has a calming effect, reducing stress and anxiety, and stabilizing the mood of green tea drinkers. Yellow, on the other hand, dilutes the blood and has an anti-cancer effect.

Water and tea-making utensils

Unfortunately, water flows from most Polish taps, which is not suitable for making tea. It has too much stone content. The best water would be spring water with as little mineral content as possible. Regardless of the quality of the water, use fresh and boiled water only once - because it contains the most oxygen.

It is best to use porcelain or glassware for making tea. In order for the leaves to develop freely, the vessel should be bulky. As the leaves absorb odors very quickly, it is a good idea to keep them in an airtight and airtight box.

As you can see, the tea brewing process is quite demanding. However, those who devoted a moment of attention to her will surely not regret it.
